dc.description.resumoStaphylococcus aureus é um dos principais patógenos responsáveis pelas doenças transmitidas por alimentos, sendo um problema de saúde pública tanto nas indústrias quanto em residências. Muitos surtos são causados pela falta de informação sobre boas práticas de manipulação e conservação dos alimentos, sendo uma das principais vias de contaminação o contato direto das mãos dos manipuladores com os produtos. As indústrias vêm utilizando aditivos químicos para evitar o crescimento microbiano e aumentar a vida útil dos produtos. Entretanto, os microrganismos vêm ganhando resistência pelo uso exacerbado de antimicrobianos e aditivos. Além disso, os consumidores estão procurando alternativas seguras e naturais para sua alimentação. Os óleos essencias (OEs) de plantas estão sendo muito usados na preservação de alimentos crus e processados, e como produtos farmacêuticos no tratamento de doenças infecciosas pela medicina alternativa e natural. O uso dos OEs é uma alternativa no controle de bactérias patogênicas, pois pode apresentar ação bactericida. Neste trabalho avaliou-se o efeito inibitório in vitro dos óleos essenciais de Origanum compactum (orégano), Cinnamomum cassia (canela), Eugenia caryophyllus (cravo), Thymus vulgaris L. (tomilho) e Zingiber officinale Roscoe (gengibre), em ágar difusão, frente a isolados de Staphylococcus aureus. Os OEs de orégano e tomilho apresentaram melhor ação, com os maiores halos de inibição (p<0,05). Desta forma, os óleos de Origanum vulgare e Thymus vulgaris L. foram selecionados para avaliar a concentração inibitória mínima (MIC) e a concentração bactericida mínima (CBM) sobre cinco isolados de S. aureus, considerados suscetíveis no teste de ágar difusão. Em ambos os testes, os dois OEs apresentaram a MIC e a CBM de 7,8 mg/mL (diluição 1:128), para todos os isolados. Com este estudo verificou-se que os óleos essenciais possuem efeito inibitório sobre S. aureus, sendo uma alternativa de aditivo natural no controle microbiológico a ser utilizado na tecnologia de alimentos.por
dc.description.abstractStaphylococcus aureus is one of the major pathogens responsible for foodborne diseases and is a public health problem in both industries and households. Many outbreaks are caused by a lack of information on good food handling and conservation practices, with direct contact between handlers and products being one of the main routes of contamination. Industries have been using chemical additives to prevent microbial growth and increase product shelf life. However, microorganisms have been gaining resistance due to the exacerbated use of antimicrobials and additives. In addition, consumers are looking for safe, natural alternatives to their diet. Essential oils (OEs) of plants are being used extensively in the preservation of raw and processed foods, and as pharmaceuticals in the t reatment of infectious diseases by alternative and natural medicine. The use of OEs is an alternative in the control of pathogenic bacteria, as it may present bactericidal action. In this work the in vitro inhibitory effect of the essential oils of Origanum compactum (Oregano), Cinnamomum cassia (cinnamon), Eugenia caryophyllus (clove), Thymus vulgaris L. (thyme) and Zingiber officinale Roscoe (ginger), compared to isolates of Staphylococcus aureus. The OEs of oregano and thyme presented better action, with the greater inhibition halos (p <0.05). In this way, the oils of Origanum vulgare and Thymus vulgaris L. were selected to evaluate the minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) on five S. aureus isolates, considered susceptible in the agar diffusion test. In both tests, the two OEs showed MIC and MBC of 7,8 mg / mL (1: 128 dilution) for all isolates. With this study it was verified that the essential oils have an inhibitory effect on S. aureus, being an alternative of natural additive in the microbiological control to be used in food technology.eng
